Just Peachy!
When we moved to Colorado six years ago, I had no idea this state was home to some of the most incredible peaches I’ve ever had. A friend told me that Colorado was known for peaches and I seriously thought she was joking. And then I tried one. Juicy, peachy, soft and so delicious. It was like a little bite of heaven!
“It was like a little bite of heaven! Now, I look forward to peach season every year.”
Now, I look forward to peach season every year, the peach stands that grace the side of the roads in local areas and the Lafayette Peach Festival, where you can buy peaches by the box and try so many fresh goodies made with peaches.
These aren’t just any peaches โ they’re unbelievably sweet, drip down your arm juicy, and what makes them truly special is that they’re “cling free,” meaning they separate easily from the pit without damaging the delicate flesh. Perfect for someone like me who loves to preserve the season’s bounty using the best methods for freezing peaches!

My Simple No-Blanch Freezing Technique
After years of perfecting this method, I’ve found the key to preserving that incredible peach flavor all year long. I use Palisades, but of course you can use any quality peach for this freezing method. Here’s my foolproof technique for how to freeze peaches without blanching:
What You’ll Need:
- Soft cloth for drying
- Fresh Palisade peaches (ripe but still a little firm)
- Sharp knife
- Parchment-lined cookie sheet
- Fresh lemon juice
- Quart-sized freezer bags
My Step-by-Step Method:
- Wash and dry peaches gently with a soft cloth
- Cut into segments and scoop out the section closest to the pit
- Work quickly โ timing is everything to prevent browning when you freeze peaches
- Lay segments in a single layer on your parchment-lined tray
- Baste lightly but thoroughly with fresh lemon juice (this is crucial for the best way to preserve peaches!)
- Freeze overnight until solid
- Transfer to freezer bags for long-term storage
๐ก PRO TIP: The secret to success is working quickly and coating thoroughly with lemon juice. If segments sit out too long, they’ll start to brown โ and nobody wants that when learning how to freeze fresh peaches!
๐I don’t peel or blanch my peaches, and here’s why: the peel adds structure to each segment and helps them hold their shape better when frozen. You can certainly peel them if you prefer, but I love the added texture and nutrients the skin provides.
