- Brown Sugar vs. White Sugar: Brown sugar adds moisture and chewiness, but can also cause more spread. White sugar makes cookies crispier. Try this: – Increase oven temp by 15–25°F above your recipe (390–400°F). – The higher heat helps cookies set quickly, holding their shape and thickness. – Watch baking times—cookies will finish faster at higher temps.

- Use Less Sweetener: Reduce sugar by 2–3 tbsp per batch to limit spreading.
- Use High Protein Flour: Swap one-fourth to one half your all-purpose flour for bread flour for extra structure. In addition, add 2-3 T. of flour more than the recipe calls for. I used high altitude all purpose flour combined with bread flour. The high altitude flour has slightly more protein than regular all purpose flour as does the bread flour.
- Reduce Leavening: Cut baking soda as described above for your altitude.
- Add Liquid: Add 1–2 tbsp extra liquid (water, milk, or molasses) to counter dry mountain air.
- Boost Spices: Increase ginger, cinnamon, and cloves by 25%—flavors fade faster at altitude.
- Chill the Dough: This is a game-changer! Chill your dough for at least two hours, or overnight for best results. The dough should be so cold it’s a bit difficult to scoop. I use a medium-sized cookie scoop and roll my dough balls in white, red, or green sanding sugar for festive flair and extra crunch.
My High Altitude Ginger Molasses Cookie Experiments
I’ve tried variations of several different recipes this year: my classic (tasty but flat), classic with addition of baking soda and baking powder (still tasty but still flat) and two new ones (better texture, but not the nostalgic flavor I love). The first new recipe I tried had apple cider vinegar in it. They turned out beautifully and are a darn good cookie, but the flavor profile was different than the recipe I have grown to love. The other new recipe variation I tried replaced half of the butter with butter flavored shortening and had added vanilla. These cookies turned out well, but again, the flavor profile was just not quite what I wanted. After researching for literally hours and using my science background, I finally finally, (yes, that is supposed to be two finally’s) came up with a Ginger Molasses recipe that worked!! I’m ecstatic and happy to share it with all of you high altitude bakers!
My High Altitude Chewy Ginger Molasses Cookie Recipe
This is the recipe that finally gave me the thick, chewy, flavorful cookies I’ve been craving at high altitude!
High Altitude Chewy Molasses Ginger Cookies
Equipment
- 1 Hand Mixer or Stand Mixer Optional
Ingredients
- 3/4 cup *butter softened
- 1 cup sugar minus two Tablespoons
- 1/4 cup molasses unsulphured- I use Gradma's original
- 1 large egg room temperature
- 1 1/2 cups **all purpose flour Hungarian high altitude AP flour has a higher protein content and works well in this recipe
- 2/3 cup **plus 2 Tablespoons bread flour
- 1/2 tsp ground cloves
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp. baking soda
Instructions
- Preheat oven to 390°. Cream butter and sugar with hand or stand mixer until well combined and creamy. This usually takes about two minutes with a stand mixer. Add molasses and egg and combine well. In a separate bowl sift together all dry ingredients and mix well. Add dry ingredients to wet ingredients until completely combined. Wrap dough in saran wrap or place in sealed container and chill for at least two hours but preferably overnight. Remove from the refrigerator and use a medium cookie scoop to scoop one inch balls. Roll each ball in sugar and bake for 7-8 minutes. They will still be soft in the middle but beginning to set and slightly brown around the edges. Remove from oven and let sit on the pan for at least 10 minutes to cool before removing from the pan.
